Regarding Hatmanah
Placing the challah into the pouch before Shabbos is not an issue, regardless of its temperature.
On Shabbos itself, most Rabbonim permit it as well, since the food is not tightly enclosed by the bag. Please consult your Rav for specific guidance. All opinions agree that if the challah is not Yad Soledes, it may be placed in the pouch on Shabbos.
